Roti Quesadilla

INGREDIENTS:
- 4 Haldiram's Phulka Roti
- 1 tbsp tomato paste
- Pinch oregano
- 2 handfuls of shredded mozzarella cheese
- 5 kalamata olives, chopped
- 2 mushrooms, chopped
- ½ long red chilli, chopped
METHOD

Heat a pan over a medium heat. Toast one side of the paratha and then place on baking paper (uncooked side down).

On the toasted side, spread over the tomato paste, oregano and sprinkle on the mozzarella, olives, mushrooms and chilli. Add a little more cheese and sandwich with another paratha cooked side touched the topping.

Now toast the paratha quesadilla on each side for 1 minute or so it becomes flaky and golden. Flip and cook on the other side for a minute.

Cool for 1 minute before slice into quarters.
